My son and I spent a snowy afternoon making these Melted Snowman Cupcakes and then repeated the activity to sell them at his Christmas fayre.  They were the first thing to sell out; I like to believe it was the cute designs and not the giant marshmallows that did it 😉

Ice the cupcakes

You want a nice flat surface for your design so if the cupcakes are really rounded and well risen, use a bread knife to slice a bit off the top and flatten them out. If you're making them from scratch, take care not to overfill the cupcake cases and they won't rise too much.

Put the icing sugar in a mixing bowl and add water a tablespoon at a time until you have a thick but spreadable consistency. Use a palette knife to spread a generous layer on each cake and then leave them to dry. If they look patchy, repeat with another layer of icing and leave to dry again.

Draw on the faces

Next, decorate your marshmallows. Lie them down so their "faces" are looking up at you and use the black and orange icing pens to draw on the "coal" eyes and mouth and "carrot" nose. Leave them lying down until the icing pens have dried completely or they may run when picked up and ruin your handiwork.

Finish off the design

When the faces are dry, use a tiny scrape of icing to stick the marshmallows to the cupcakes as the "head". Then, using the black icing pen, draw two stick arms onto the flat cake.

Finally, add two smarties for the snowman's "buttons" and serve to hungry children (and parents too!). Guaranteed to put a smile on your face.
