1 large egg
1 cup milk Just use any standard coffee mug
1 cup self-raising flour Make sure to use the same standard coffee mug
a pinch of salt
a handful of blueberries or chocolate chips (optional flavouring)

These Magic Pancakes are light, fluffy and gorgeous. Great for breakfast for the whole family.

If you use a standard coffee mug to measure out your flour and milk, the pancakes are guaranteed to work every time – just like magic!  I like to add a handful of blueberries or chocolate chips to the batter too, just to mix it up, but you can throw in any of your favourite flavourings.  Don’t forget to top them too: simple lemon and sugar, some summer fruits (as shown here) or even bacon and maple syrup! Yum!

Makes 8 pancakes.

Crack the egg into a small bowl with the milk and beat together with a fork.

Sieve the flour and add to the salt in a second, larger bowl, with the blueberries or chocolate chips, if using, and make a well in the middle (make a hole in the middle of the flour with your hand). Pour the wet ingredients into the well and whisk together to combine. You want to get as much air in the batter as possible to create light, fluffy pancakes.

To make the pancakes, put a teaspoon of cooking oil in a small frying pan and tip the pan gently to coat the bottom with the oil. If there's any excess, pour into a jug and keep for the next pancake. Place on a medium heat to warm the oil. Put two tablespoons of the pancake batter in the pan and swirl around again to coat the pan evenly. Cook on this side for 2 minutes, until you can see the dark colour of the batter gradually change to a paler yellow all over and little bubbles appear on the surface.

When the pancake is pale and even, it's time to turn it. Take it off the heat and use a plastic (Teflon) spatula to loosen the pancake all around. Now you can either pick up the pancake with the spatula and turn it over or be brave and...flip!

The pancake will just require two-three more minutes on its second side to cook through. Tip it out on to a plate and cover with foil to keep warm while you make the others.

Repeat steps 3-5, including coating the pan with oil again if necessary. Serve immediately.
