250g self-raising flour
100g porridge oats
100ml honey
1 large egg
250ml apple or orange juice Depending on which flavour you are making
4 tbsp. apple sauce or orange marmalade Depending on which flavour you are making

This recipe for Healthy Mini Muffins is based on an article I read years ago when low-GI food was just starting to be popular.  The recipe replaces sugar with honey as a sweetener and uses oats as a slow-release energy source to ensure that these muffins keep you going until your next meal.  Here, I’ve flavoured them with apple and orange.  Because of the oats, they’re a bit chewier and denser than usual muffins, which helps with the whole ‘slow-release’ thing.  They’re particularly good for lunchboxes – and my kids love them!

Makes 24 mini muffins.

Sift the flour into a medium mixing bowl, along with the oats.

In a jug, mix the honey, egg and fruit juice with 3 tbsp. cooking oil.

Pour the wet ingredients into the dry and add the apple sauce or orange marmalade. Stir to combine into a thick-ish batter.

Use teaspoons to dollop the batter into the mini muffin cases. Ideally, use a mini-muffin tin too, to help them hold their shape while cooking. If you don't have one (I didn't!) then 'double up' the cases instead. Bake the muffins for about 14-16 minutes on 180°C, or until you can smell them cooking.
