a few pieces of cooked chicken breast
1/2 red onion - sliced finely

If there’s an adult in your house who likes to take their own lunch to work then you’ll know how difficult it is to keep things interesting.  In my house it’s my husband who packs a lunch and you can guarantee that most mornings there’s a conversation that begins, “honey, you know how you make the best Greek salad/chicken wraps/Caesar dressing?…”

See where this is going?!

Anyway, I kind of like to have a few new ideas up my sleeve to keep him coming back for more, like these Chicken Hummus Wraps (just make as many as you need) that I “invented” last week.  After all, they do say the way to a man’s heart is through his stomach!

This Chicken Hummus Wraps recipe is so simple that I almost didn’t post it but then I remembered all the conversations at breakfast time in other houses that start “honey?…”

If you feel like entering for chef of the year, then by all means make your own hummus too (see related recipes below).  Other than that, better start thinking about something new for tomorrow!

To make one wrap, lay out a tortilla flat on the work surface and spread a tablespoon of hummus over it evenly.

In a line down the middle of the wrap, layer first your salad leaves, then the cooked chicken pieces and finally the sliced red onion. Roll up the wrap in any way that you want and eat. It's that simple!
